Whipped Chocolate Ganache

Yes, you read that right.

Whippeed Chocolate Ganache.  Pure.  Chocolate.  Magic.

It’s very simple, and can be used as a filling or an icing.  It is fantastic no matter how it is used.

Whipped Chocolate Ganache

Ingredients

1/4 cup heavy whipping cream

4 oz chocolate

1 tsp vanilla

1/4 espresso powder (optional)

Instructions

Put chocolate in a heat-proof bowl.

Heat cream in a saucepan JUST until boiling. Pour over the chocolate.  Let sit for 30 seconds.  Whisk until completely melted and creamy. (It may look a little runny and speckled.  Just keep whisking.)

Add the vanilla and espresso powder (if using).  Mix until blended.

Let cool to room temperature.  Beat on high(I use hand held mixer) until creamy and fluffy.

**This will be soft.  If you want to pipe with it, simply put it in the fridge for a bit before beating it.
